These light, fluffy and chewy almond biscuits are the perfect afternoon snack! Just be careful not to eat them all at once. 

What are amaretti biscuits?

In Dutch we know these cookies as ‘bitterkoekjes’ which literally translates to bitter cookies. Amaretti biscuits are light, fluffy and chewy almond biscuits that get their distinctive bitter taste from almond extract. It’s a MUST in this recipe!

You can kind of compare amaretti biscuits with an almond flavoured macaron, yet these are so so so much easier than macarons.

Another plus is that these cookies are origingally gluten free! As an extra variation on the classic cookie, you could dip them in melted chocolate and then in coconut or leave them as is. Even though these beauties are already delicious on their own. 

How do you make these cookies?

These cookies could honestly not be more easy to make. There are basically three steps to this recipe. 

  1. Mix all your ingredients together
  2. Pipe your cookies on a with baking paper lined baking sheet
  3. Bake your cookies

Ingredients

  • 150gr powdered sugar
  • 150gr almond flour
  • 2 egg whites
  • 1tsp almondextract

Instructions

  1. Add all your ingredients into a bowl and mix until a smooth mix. Be careful with adding the almond extract as it has a very strong taste. Half to 1 teaspoon is more than sufficient
  2. Add your batter into a piping bag with a round nozzle and pipe your cookies on a with baking paper lined baking tray. The cookies should be around 2cm in diameter 
  3. Bake your cookies at 190c for 10-12 minutes or until golden brown. Remember that cookies continue to bake once they’re out of the oven
  4. Leave your cookies to cool completely before peeling them off your baking sheet. They will break if they’re not cooled down enough or if you havent’ baked them for long enough! Use this as your indicator for baking
  5. Once cooled, enjoy!
