Traditional Dutch ‘Bokkenpootjes’

‘Bokkenpootjes’ are delicious Dutch cookies loved for their flavour and texture. Delicious buttercream sandwiched between two meringue cookies, with both ends dipped in chocolate. DE-LI-CIOUS

What are bokkenpootjes?

Traditional Dutch - Bokkenpootjes are a traditional Dutch pastry that has been popular in the Netherlands for many years.

Unique Shape - Bokkenpootjes have a distinctive shape. They typically consist of two elongated cookies covered with chocolate at both ends, giving them a resemblance to baby goat legs, hence the name "bokkenpootjes."

Crunchy and Soft - What makes bokkenpootjes special is their texture. They combine a crunchy exterior with a soft, light filling. The filling is usually buttercream, but there are also variations with, for example, mocha cream.

Variations - While traditional bokkenpootjes are most popular, there are various variations. Some people add chopped nuts to the buttercream filling or experiment with different types of chocolate.

Baking time and oven temperature

Remember, each oven is unique, so some adjustments to baking time and oven temperature might be needed based on your specific baking environment. All oven temperatures in my recipes are based on a conventional oven. If you bake with a fan-assisted oven, turn down the temperature slightly as these ovens tend to become hotter than a conventional oven at that temperature setting. Ovens have the tendency to deviate from the temperature you set the oven to. I would highly recommend using an oven thermometer to ensure the inside of your oven is at the right temperature. My oven for example only goes up to 160C even though I turn it up to 230C 

An oven that is too hot may result in an overbaked or burnt bake, an oven that is too cold may result in underbaked and soggy bakes. Having the thermometer will not only help in getting the right temperature but also helps in determining the right baking time. 

Other factors that may affect baking time

The size of your baking dish may also highly affect your baking time. A wider pan means that the batter spreads out more, resulting in it baking faster than in a smaller pan where the batter is thicker in height.

Ingredients

Meringue Cookies

  • 100gr almond flour
  • 50gr powdered sugar
  • 20gr flour
  • 10gr cocoa powder
  • 4 egg whites
  • ½ tsp salt
  • 150gr sugar
  • 30g shaved almonds

Buttercream:

  • 50gr unsalted butter (room temp)
  • 80gr powdered sugar
  • 1tsp vanilla
  • 1tbsp full fat milk or cream

Decoration

  • 150gr dark chocolate

Instructions

  1. Sift your flour, cocoa powder, almond meal, and powdered sugar into a bowl.
  2. Whip your egg whites in a grease-free bowl until stiff peaks form. Gradually add the sugar and continue whipping for about 10 minutes until stiff peaks.
  3. Gently fold in your dry ingredients. Using a piping bag, pipe the batter into equal strips of about 5cm each on a parchment-lined baking sheet. Sprinkle them with sliced almonds and bake in a preheated oven at 160°C for about 15-20 minutes.
  4. While the cookies cool, you can go ahead and make the buttercream. Beat your butter on high speed for about 5-10 minutes until it becomes a fluffy mixture. Add the remaining ingredients and mix until well combined.
  5. Pipe your buttercream onto half of your cookies and sandwich the other half on top.
  6. Melt your chocolate and temper it so that it doesn't melt at room temperature.
  7. Dip both sides of the filled bokkenpootjes in chocolate and let them harden on a piece of parchment paper.
  8. Enjoy!
