Soy Marinated Ramen Eggs

Ramen eggs are soy sauce marinated eggs in a spicy, garlicky, sweet and savoury sauce with that delicious jammy yolk when you cut them in half. They go great on ramen (duh) but are also delicious editions to many other savoury dishes. Marinated eggs are so easy to make, come together in under 15 minutes and I promise that you will love them too! 

Let’s be honest, a ramen bowl is not a ramen bowl without this delicious marinated egg on top.

How do you make Soy Marinated Eggs? 

There are only 3 steps to this recipe:

  1. Soft-boil your eggs
  2. Mix your marinade ingredients
  3. Marinate your eggs in the soy-sauce mixture

How do you soft-boil the perfect egg? 

There are a million different ways to soft-boil your eggs, but the method I’m about to explain has my personal preference. 

- It starts with eggs, either room temperature or refrigerated eggs are fine. Then take your kettle and start boiling some water. 

- When you place your eggs in a saucepan, make sure that the pan is not too large so you don’t have to add too much water. Adding too much water will make it harder for the water to continue boiling, which is vital for the perfect egg. 

- Add the boiling water to your eggs to just cover all of them. Set a timer to 6-7 minutes, 6 for room temperature eggs and 7 for refrigerated eggs. 

- As soon as the timer goes off, take your eggs off the heat and shock them in an ice-bath

- Once cooled, gently crack the shell of the eggs and gently peel the eggs.

There you have it! Perfectly soft-boiled eggs every 👏 single 👏 time 👏

These eggs are a very popular side dish in many Korean and Japanese households, and I can see why! Here are a few delicious dishes that you can pair these eggs with:

  • Ramen soup
  • A steaming bowl of white rice with crispy seaweed
  • Fried rice
  • Egg noodles
  • Ramen noodles
  • Toast

The best part about this recipe is that you can play around with the sauce to make it more to your liking. Not a fan of garlic? Feel free to leave it out. Big fan of sesame? Add a few drops of sesame oil! So this is one of the few recipes on my site where I’ll allow you to deviate from what is written below :).

Ingredients

  • 100ml soy sauce (I prefer the low sodium from Kikkoman)
  • 200ml water
  • 4tbsp mirin
  • 2tbsp rice vinegar
  • 1tbsp honey
  • 3tbsp toasted sesame seeds
  • 2 spring onions
  • 2 cloves of garlic
  • 1tbsp red pepper flakes
  • 5-6 eggs

Instructions

Soft boiling your eggs

  1. Soft boil your eggs. Place your eggs in a small saucepan and cover with boiling water. Set the heat to medium-high and let your eggs boil for 6-7 minutes (6 for room temp eggs, 7 for refrigerated eggs).
  2. Strain out the water and shock the eggs in an ice bath or cold water. Once cooled, gently peel the eggs and set them aside

Marinating your eggs

  1. Thinly slice your green onions and finely chop your garlic. Add all the ingredients to a large mason jar. Make sure you choose a jar where your eggs will be fully covered by the marinade
  2. Gently lower in your eggs and leave to marinate in the fridge for at least 1 hour, to a maximum of 3 days. Keep in mind that the longer you marinate your eggs, the saltier they will get
