Soy Sauce Marinated Eggs
Ramen eggs are soy sauce marinated eggs in a spicy, garlicky, sweet and savoury sauce with that delicious jammy yolk when you cut them in half.

Ingredients
- 100ml soy sauce (I prefer the low sodium from Kikkoman)
- 200ml water
- 4tbsp mirin
- 2tbsp rice vinegar
- 1tbsp honey
- 3tbsp toasted sesame seeds
- 2 spring onions
- 2 cloves of garlic
- 1tbsp red pepper flakes
- 5-6 eggs
Instructions
Soft boiling your eggs
- Soft boil your eggs. Place your eggs in a small saucepan and cover with boiling water. Set the heat to medium-high and let your eggs boil for 6-7 minutes (6 for room temp eggs, 7 for refrigerated eggs).
- Strain out the water and shock the eggs in an ice bath or cold water. Once cooled, gently peel the eggs and set them aside
Marinating your eggs
- Thinly slice your green onions and finely chop your garlic. Add all the ingredients to a large mason jar. Make sure you choose a jar where your eggs will be fully covered by the marinade
- Gently lower in your eggs and leave to marinate in the fridge for at least 1 hour, to a maximum of 3 days. Keep in mind that the longer you marinate your eggs, the saltier they will get
