What is chia pudding?

I believe that by now everybody has heard about the infamous superfood ‘chia seeds’ and all have hopped on the bandwagon since. Chia seeds are a seed (duh) with some incredible health features. They are packed with healthy fats, dense in nutrients and contain a lot of fibre, which are the perfect conditions for a healthy and satisfying breakfast. 

Making chia pudding sounds incredibly complicated, but it’s actually just 2 ingredients! Chia seeds and any kind of liquid. Once you combine the two, some kind of magic happens. The chia seeds absorb the liquid, creating a jelly-like coating around the seeds which makes the mixture turn into a pudding-like thick blend without adding anything else!


It is safe to say that any chia pudding is a staple breakfast in this household, so switching things up with a tropical version keeps it fun! 


Piña Colada Chia Pudding

Ingredients

  • 6tbsp chia seeds
  • 300-350ml coconut milk
  • 250gr fresh pineapple
  • 6tbsp coconut yoghurt
  • Toasted coconut flakes

Instructions

  1. In a medium bowl, mix together your chia and milk, set this aside for 5 minutes and stir again so the chia does not sink to the bottom. Once combined, cover and leave in the fridge overnight
  2. Blend your pineapple into a puree
  3. Start with a layer of chia pudding, followed by a layer of pineapple puree. Add another layer of chia pudding and end with a layer of yoghurt. Repeat this for the second portion
  4. Top with the toasted coconut flakes and dig in!
