If you’ve ever wondered how to make Rocky Road, this is your article. Just a few ingredients and you are able to whip up this delicious treat in just minutes. Rocky Road is the most customisable treat on the internet and here is my peanut butter & pretzel version. 

No-bake Rocky Road 

A great Rocky Road mix consists of 1 type of chocolate and around 3-4 types of textures. Think of a mix of chewy, crispy, soft and crunchy textures. So feel free to switch any ingredient to your liking. A perfect rocky road to me is fudgy, chewy and has a good crunch. 

Another great feature about Rocky Road is that you can pack them up into cute little gift packages and hand them out during Christmas or as a delicious party favour. 

Tips to make the perfect Rocky Road

Use high-quality chocolate

As chocolate is the most prominent part of this no-bake dessert, make sure to use a high-quality brand. 

How to cut Rocky Road

To get perfectly clean slices, run your knife under hot water for each slice. Don’t forget to wipe off that water! The hot knife will run through the rocky road as butter and give you perfectly clean cuts.

Ingredients

Base:

  • 250gr chocolate of choice
  • 15gr butter
  • 30gr golden syrup or honey
  • 1/4tsp salt

Filling:

  • 70gr cookies of choice
  • 40gr mini marshmallows
  • 15gr freeze-dried raspberries
  • 60gr roasted pecan

Topping

  • Peanut butter

Instructions

  1. Line a square pan with greaseproof baking paper
  2. In a saucepan over medium heat, melt your butter, chocolate, golden syrup and salt. Mix till everything is combined into a smooth batter. Take it off the heat and let it cool down slightly, around 5-10 minutes at room temperature
  3. Add ⅔ of your filling ingredients and mix this through your chocolate mixture. Dunk this into your lined square pan and distribute it evenly
  4. Top your Rocky Road with the remaining ⅓ of your filling ingredients.Dollop on some peanut butter and swirl this into your rocky road, then place to set overnight in the fridge
  5. Once all set, slice & serve!
