Nutella-Filled Lace Cookies

These easy lace cookies are filled with gooey Nutella and are unlike any cookie you’ve ever had. These come together in under 30 minutes and are so good!

These cookies fall under the category of ‘can’t stop eating them’ cookies and are a MUST to make! 

What are lace cookies?

Lace cookies are known under various different names, Florentine cookies, lace cookies or perhaps how we call them in Dutch ‘Kletskoppen’ (literally translated to talky heads). 

Lace cookies are thin and crunchy cookies made from Sugar, Butter, Flour & typically a chopped nut or oats. Lace cookies are called the way they are as you can peek through the cookies like with lace.   

Tips for making the best Florentine Cookies

Use pre-roasted nuts - roasted nuts contain so much more flavour than unroasted nuts, make sure to toast those babies before chopping!

Don’t skip on flavourings - salt, vanilla & cinnamon are a must. The salt balances out the sweetness, the vanilla adds depth and the cinnamon brings a bit of spice to the party

Mould your cookies while hot - Lace cookies are bendable and mouldable when still hot, so if you’re looking for perfectly round cookies that’s the time you want to mould them

Leave your cookie dough to rest - Leave your cookie dough to rest for just 5 minutes allowing the mixture to thicken up slightly

Ingredients

  • 45gr butter
  • 150gr light brown sugar
  • 30ml full-fat milk
  • 75gr cake flour
  • 50gr white almonds, medium-roughly chopped
  • 1btsp vanilla
  • ½ tsp cinnamon
  • 1tsp salt
  • Nutella

Instructions

  1. In a sauce-pan over medium heat, melt together the butter, sugar, salt & milk until it all comes together
  2. Once combined, add your flour, cinnamon, vanilla and chopped almonds and mix until combined. Leave to cool for 5 minutes to let the mixture thicken slightly
  3. Add 1tsp sized scoops of batter on a baking sheet, leaving at least 8cm between each scoop as they will spread during baking
  4. Bake at 180c for 10-12 minutes, take them out of the oven and shape them into a round cookie while they are still hot
  5. Leave to cool completely
  6. Spread 1 teaspoon of Nutella (or more if you love really Nutella) on the back of a lace cookie and sandwich another lace cookie on top
