Banana bread is an all-time crowd-pleaser and has received the necessary social media love during the beginning of the pandemic. I think there has not been one household that did not bake banana bread during the lockdown. Whilst the classic loaded banana bread is very hard to beat, this Maple Tahini Banana Bread is a classic of its own kind. 


Toasted Banana Bread


The best part about this banana bread is that it has just the right amount of sweetness, which makes this quick bread so versatile. You can enjoy a slice on its own, fresh out of the oven. But…. my personal favourite way of eating this banana bread is the day after and let me tell you why. On the second day, all the flavours of the banana bread will have developed and blended together, the slices are still fluffy and moist, but here comes the best part. Toast a big slice of banana bread in a toaster or on a panini grill, slather it with butter, a good drizzle of honey and some flaky sea salt. A crunchy exterior, fluffy and moist centre and finished with that creamy, sweet & salty topping.. 🤤 Trust me, you won’t regret it. 



What is Tahini?

You’ve probably heard about the ingredient Tahini before but you might be thinking, what exactly is it? Tahini is basically a nut butter made from Sesame seeds, think about peanut butter but then made out of sesame seeds. It is a staple ingredient, especially in the Mediterranean and Middle-Eastern cuisines. It is often used in savoury dips such as hummus or baba ganoush, or as a dip or spread on its own. Tahini is incredibly versatile and can therefore also be used in baking and it’s the perfect compliment in this banana bread. 


When buying Tahini, make sure you look for the kind that is silky smooth, creamy and runny. Some stores might sell tahini of lesser quality which is generally very dry and bitter.

Ingredients

Tahini Maple Banana Loaf

  • 90ml vegetable or olive oil
  • 90ml maple syrup
  • 90gr tahini
  • 2 eggs
  • 3 large (over)ripe bananas
  • 270gr flour
  • 1tbsp lemon juice
  • 1tsp baking powder
  • 1tsp baking soda
  • 1/2tsp cinnamon
  • 1/4tsp nutmeg
  • 1tbsp vanilla

Maple Cinnamon Tahini Swirl

  • 90ml maple syrup
  • 1tbsp cinnamon
  • 25gr tahini

Sesame topping

  • 1tbsp white sesame seeds
  • 1tbsp black sesame seeds

Instructions

  1. Preheat your oven to 180C
  2. In a medium sized bowl, mash your bananas and set aside
  3. In a large bowl, whisk your tahini, maple syrup, vanilla & oil together. Add your eggs one by one and mix till combined. Only add the next egg when the previous egg has been completely incorporated into your batter.
  4. Whisk in your mashed banana & lemon juice
  5. Switch to a spatula and add your flour, baking powder & soda, cinnamon, nutmeg. Gently fold that in until the dry mixture is incorporated
  6. In a seperate small bowl, mix your maple syrup & cinnamon. This seems impossible, but keep whisking and it will eventually come together
  7. Line and grease a 35x12cm loaf pan
  8. Add 1/3 of your banana batter into the loaf pan. Spoon over 1/3 of your maple-cinnamon mixture, followed by 1/3 of your extra tahini. Grab a knife and swirl it into the batter
  9. Repeat this process 2 more times and finish with a last swirl of maple cinnamon & tahini
  10. Top your cake with the sesame seeds and bake for 40-45 minutes

I had no expectations for this, except Keep an open mind. This wIll now be staple of fall. It was so, so good. I may experiment next time and add smoked gouda cheese, YUM!!!
