Buckle up loves, this loaded banana bread is about to blow your mind. This moist banana bread is loaded with chocolate, walnuts & plump sultanas. Eat it fresh out of the oven or the day after when it's extra moist. Just the perfect snack, PLUS it is the most perfect way to use up all those overripe bananas.

I’m gonna be honest, I even buy more bananas than I know I can eat in a week, just so I have an excuse to whip up this banana bread at the end of the week. 



Chocolate Chunk Banana Bread

This banana bread is like the Ben & Jerry’s Chunky Monkey take on banana bread. It’s loaded with chocolate chunks, toasted walnuts, juicy & plump sultanas and incredible banana flavour with hints of cinnamon & vanilla. 



How to make the best banana bread

There are just a few steps to whip up this amazing banana bread and it doesn’t require much extra explanation, but there are a few tips I can give you to get the best flavour!


  • Use overripe bananas. When I say overripe, I really mean brown-brown overripe bananas, no yellow bananas allowed! Didn’t have enough time to let your bananas ripen? You can also bake them in an oven on 200C for 15 minutes until they are pitch black and juicy on the inside, that does the trick too! However, for the best sweet flavour, I highly recommend allowing them to naturally ripen
  • Don’t overmix and/or bake. I can’t stress this enough, overmixing your batter will only result in tough bread and overbaking will dry out your loaf. So, highly recommended to stop mixing once all the dry is fully incorporated and to stop baking when a toothpick doesn’t leave wet batter behind
  • Coat your walnuts & chocolate in flour. Now, this might sound a bit excessive, but it makes all the difference! Coating these ingredients in flour makes sure that they do not sink to the bottom and burn to the loaf pan, nobody likes burnt chocolate right? Plus, we want that even distribution of chunks!

Ingredients

  • 75gr toasted walnuts
  • 180gr dark or milk chocolate 
  • 4 medium (over)ripe bananas
  • 100gr vegetable oil
  • 175gr self-raising flour
  • 100gr granulated sugar
  • 2 eggs
  • 60gr sultanas
  • Earl Grey teabag
  • 1tsp cinnamon
  • 1/2tsp salt
  • 1tbsp vanilla

Instructions

  1. Preheat your oven to 180C
  2. Place the sultanas and teabag in a bowl. Cover it with boiling water and let it steep for at least 15 minutes.
  3. If you’ve purchased unroasted walnuts, quickly toast them in a pan over a medium heat until golden and nutty. 
  4. Mash your bananas in a medium-sized bowl and set aside. Chop your chocolate into large chunks and chop your toasted walnuts into pieces, set this aside
  5. In a large bowl, whisk together your sugar, vanilla and oil. Whisk in your eggs one by one, until fully incorporated. Add your mashed bananas and mix to incorporate
  6. Grab a spatula and add your flour, salt & cinnamon. Mix this in and when you are about halfway into incorporating your flour, add your walnuts, chocolate and drained sultanas
    💡 Tip: Coat your walnuts and chocolate in a bit of flour so it does not sink to the bottom while baking
  7. Mix all the ingredients together until it is all just incorporated, stop mixing right after so you don’t overmix the batter
  8. Butter & line a loaf pan (28cm) , pour in the batter and bake for 50-55 minutes
