A surprisingly light and ultra fudgy chocolate cake that is also gluten-free, insanity! Less gluten means extra chocolate, right? This cake is best served with some whipped cream or a good scoop of ice cream.
This cake looks like it’s been dropped right out of heaven and the taste definitely lives up to that too! This fallen flourless chocolate cake is light, has a crackly top, a fudgy centre and an intense and rich chocolate flavour, plus it’s gluten-free. What’s not to love!
Now, this cake does not need much, but there are a few tips I can give you to make sure you nail down this recipe.
Make sure your mixing bowl is grease-free - Whipping egg whites is a very simple task but can become impossible when there’s grease mixed into your bowl or egg whites. Fat particles will cause the air bubbles of the whites to pop, meaning that you are unable to whip your egg whites to stiff peaks. To really make sure there’s no grease left in your bowl, wipe it with lemon juice or some vinegar and a paper towel.
Don’t overmix your batter - You’ve spent a lot of time whipping that air into the egg whites, don’t knock it all out by overmixing! You don’t want to see any streaks of egg whites or lumps of cacao powder, but you also want to stop mixing as soon as you’ve reached this point. Overmixing will cause your egg whites to deflate which will have a negative impact on the texture of your cake.
Use good quality chocolate - I can’t stress this enough! Chocolate is the main hero of this cake so you want it to shine baby! The quality of your chocolate will have a direct impact on your finished product so go and splurge on that good quality chocolate. I like using Lindt, Callebaut or Tony Chocolonely’s with at least 70% cacao.
