This no-bake, easy rocky road is the perfect treat for your bakesale, as a giveaway gift or a treat next to your midday cup of tea. 

My favourite part of this recipe is that it is completely customisable and comes together in just under 15 minutes. Don’t like raspberries, swap them out! Feel free to add whatever you feel will go well with this chocolatey treat. 

But, if I may promote my own mix, this combo is an absolute crowd-pleaser. 🥇

What is Rocky Road?

Now I won’t bore you with the origin of Rocky Road (which is debatable), but Rocky Road is a no-bake chocolate treat made out of chocolate, marshmallows and other ingredients that tend to vary by country. 

Even though each country has its own variety of fillings, they all tend to stick to the following components:

A fruity component (dried or freeze-dried fruits)

A nutty component (peanuts, almonds, hazelnuts etc.)

A squishy component (marshmallows, Turkish fruit etc.)

A crunchy component (biscuits, Maltesers, cookies etc.)

So if you stick to the above, you can’t possibly go wrong

How do I make this no-bake rocky road? 

You heard it right, there is no oven involved in making this (Christmas) rocky road. Other than that you require just a handful of ingredients and it basically comes together in 3 steps:

  1. Melt your base ingredients until they come together
  2. Add your fillings
  3. Dump it in a container and let it set in the fridge

Ingredients

Chocolate base:

  • 250gr chocolate of choice
  • 120gr butter
  • 30gr golden syrup or honey
  • ¼tsp salt 
  • 1tsp vanilla

Filling:

  • 70gr Maltesers
  • 40gr mini marshmallows
  • 15gr freeze dried raspberries
  • 60gr pistachios

Instructions

  1. Prepare a square tin by lining it with baking paper
  2. Melt your chocolate, butter & syrup or honey until all melted and combined
  3. Add your vanilla & salt and mix until incorporated, set aside to cool shortly
  4. Add all your filling ingredients into a bowl and mix them together
  5. After letting the chocolate mixture cool for 5 minutes or so
  6. Take your filling and add about ⅔’d of it to your chocolate mixture, mix until fully combined
  7. Dunk your mixture into the prepared tin and finish off by topping it with the remainder of your filling mixture
  8. Leave in the fridge to set completely before serving, about 4 hours to preferably overnight.
