This homemade granola is PACKED with nuts, seeds, vanilla, cinnamon, has a little touch sweetness and even has added protein. What more can you ask for to start your day with?

This recipe will leave your house smelling AMAAAAZING, the vanilla, hints of cinnamon and that scent of baked nuts & coco? If I could make my own scented candles, this would be it. 

What makes this Granola special?

Not many granola recipes call for salt & vanilla, but I believe that these are just the ingredients that will take your granola to the next level. 

Not only is this granola packed with nuts & seeds which are great for fiber & protein and provide you with tons of micro nutrients, this granola even has added protein coming from the addition of the egg whites. Now I know adding egg whites to your granola might sound strange, but trust me on this. The egg whites act as a stabaliser that makes the ingredients stick together and form delicious clusters in the oven. 

How do you make this Vanilla Granola? 

There basically just 2 steps to this recipe - mix all your ingredients and bake in the oven. How much more simple do you want it to be? 

Tips for making the best Healthy Homemade Granola

Use a good quality vanilla - Vanilla is a key ingredient in this granola and just elevates and supports all of its delicious flavours

Don’t forget to add salt - The salt is here to balance out all the flavours and can even provide you with some health benefits like balancing water & minerals in your body

Use a variety of nuts & seeds - I find that the combination of nuts & seeds in this recipe works the best, but feel free to swap out the nuts to your liking. Just make sure they are pre-roasted for the best flavour

Add honey or maple syrup for sweetness - Honey or maple syrup gives this granola just the right amount of sweetness it needs without spiking your blood sugar. It also helps the granola to stick together and will caramelise beautifully in the oven

Add egg whites - Trust me on this… Not only will it give added protein to your granola, it will also help the mixture to form gorgeous clusters in the oven for you to snack on

How do you store homemade granola?

You can store this granola in an airtight (glass) container for up to 2-3 months. I prefer using a glass container so the plastic won’t give off any of its flavour during storing. Make sure the container is airtight so your granola will stay crunchy and fresh for longer.

Ingredients

  • 60gr pumpkin seeds
  • 60gr sunflower seeds
  • 50gr coconut oil (melted)
  • 50gr coconut flakes
  • 100gr almonds (skin on)
  • 100gr roasted hazelnuts
  • 100gr roasted pecan nuts
  • 350gr rolled oats
  • 60gr egg whites
  • 1tsp salt
  • 2tbsp cinnamon
  • 1tbsp vanilla 
  • 100gr honey or maple syrup

Instructions

  1. Preheat the oven to 180C
  2. Add all your ingredients into a bowl and mix until it is all very well combined and all your nuts & oats are covered equally
  3. Evenly distribute your granola on a with parchment paper lined baking tray
  4. Bake your granola for 15-20 minutes
  5. Take out your tray of granola and using a spatula, flip your granola over and flatten out again
  6. Bake for another 10-15 minutes and leave to cool completely
  7. Break up your granola, store it in an airtight glass container and enjoy!
