Originally, the ‘Mergpijp’ pastry might not be Dutch but in The Netherlands, we have crafted our version that is entirely Dutch. A soft vanilla cake with layers of (raspberry or strawberry) jam, creamy buttercream made from whipped butter and pastry cream, enveloped in soft marzipan, dipped in dark chocolate on both sides. It may be a bit of a task, but these pastries taste even better due to all that hard work.
