Chocolate Covered Dates Stuffed with Almond Butter and Caramelised Pecans

My god that’s a mouth full! This no-bake, highly addictive and ridiculously easy snack that comes together in just minutes is here to satisfy your sweet craving 🍫. Plus, they’re vegan! 

Dates, also known as nature’s caramel! The combination of a sweet & sticky date, stuffed with velvety nut butter, crunchy, cinnamony & sweet nuts, covered in chocolate and that sea salt to balance it all out, I’m already drooling while writing this post…  

Ingredients for Chocolate Covered Stuffed Dates

This amazing snack luckily only requires a few ingredients. To make it easier for you to go shopping, here’s a little list:

  • Large Medjool dates
  • Pecan nuts
  • Maple Syrup
  • Cinnamon
  • Coconut oil
  • Dark chocolate

How to make Stuffed Dates with Almond Butter and Caramelised Pecan

You can make this snack with just a few simple steps

  1. Caramelise your pecans with maple syrup and cinnamon, roughly chop them once cooled
  2. Slice your dates & stuff them with almond butter and your chopped pecans. Place in the freezer to set
  3. Melt your chocolate & coconut oil
  4. Cover the dates in chocolate, top them with some flaky sea salt and leave in the fridge to set
  5. Enjoy! 

Common questions

Can I use a different filling?

Absolutely! I could recommend stuffing these with peanuts & peanut butter to give it a snickers vibe, or perhaps try using hazelnut butter for a little praline moment.

I used an all-natural almond butter from De Notenshop, but you can definitely use your own favourite nut butter. Why not even go crazy and stuff these with Nutella and hazelnuts. But in the end… this is my ultimate favourite combination.

What do I top the dates with? 

You can top these with whatever your heart desires. Chopped nuts, shredded coconut, pistachios, freeze-dried raspberries, white chocolate or my personal favourite, sea salt. The salt just balances out the sweetness and gives it that perfect sweet & salty mix. 

How do I store these chocolate covered dates?

You can store these dates in an airtight container, in the fridge for up to 10 days. If they even last that long…

Ingredients

  • 12 large Medjool dates
  • 3tbsp almond butter
  • 20gr pecan nuts
  • 1tbs maple syrup
  • Pinch of cinnamon
  • Flaky sea salt
  • 100gr dark chocolate (70%)
  • 1tbsp coconut oil

Instructions

  1. Line a baking sheet with parchment paper and set aside
  2. In a small frying pan over medium heat, gently toast the pecan nuts. Once toasted, add your maple syrup, a pinch of cinnamon and a pinch of salt. Give the nuts a toss so they are all covered equally. Toast them for another 20-30 seconds and set aside to cool
  3. Using a sharp knife, slice the dates lengthwise. Do not cut them all the way through! Remove the pits and set them aside. 
  4. Roughly chop your caramelised pecan nuts
  5. Pour your almond butter into a piping bag, you could also use a spoon or ziplock bag if you don’t have any
  6. Take your dates and fill them with the almond butter, stick the pecan nuts on top of the almond butter. Place the stuffed dates on a tray and stick them in your freezer to set, around 10 minutes
  7. While the dates are chilling, melt your chocolate and coconut oil over au bain-marie
  8. Take your dates out of the freezer once the chocolate is melted. Cover your dates in chocolate, I like to use either a small fork or stick them on a toothpick and dunk them into the chocolate. Gently tap them on the side to shake of any excess chocolate
  9. Top your dates with flaky sea salt and leave to set in the fridge completely
  10. Store in either the fridge or freezer and enjoy!
