Kick off your day with this incredible breakfast crumble. It's full of the right nutrients to get you going and it is a true treat to start your day with.

The BEST healthy Berry Breakfast Crumble

Whether it's a weekday or a weekend, I could devour this every day. Especially for the working from home people amongst us, take your time to treat yourself in the morning.

If you're like me, a fruit crumble with a good scoop of vanilla ice cream is one of my absolute favourite desserts. So you can imagine how happy I was when I created this equally good breakfast version.

Fresh berries VS Frozen berries for crumble

Both would work equally well! When berries are in season, I would naturally always gravitate towards using fresh berries. HOWEVER, I feel that using fresh and in season berries for a crumble is a waste of their beauty. That being said, this leaves the perfect opportunity to use up any fruit that's nearing the end of it's freshness in this crumble.

So, fresh or frozen?

All in all it does not matter if you use frozen or fresh berries, a frozen mix leaves you with a more juicy filling and fresh berries tend to keep their shap better. So I would say use whatever is best available in your region! 🙂

Ingredients

  • 250gr frozen or fresh berries
  • 3tbsp ground oats⁠
  • 3tbsp rolled oats⁠
  • 3tbsp almond flour⁠
  • 1,5tbsp almond butter (or any other nut butter)⁠
  • 2tbsp maple syrup⁠
  • 2tsp coconut oil (not melted)⁠
  • salt & cinnamon to taste⁠
  • Handful almond flakes⁠

Instructions

  1. Preheat your oven to 170C
  2. Place your fruit in an oven safe tray, add 1tbsp of the maple syrup and give this a good mix
  3. In a seperate bowl, combine all your other incredients and stir into a crumbly dough
  4. Divide your crumble on top of your fruit and bake in the oven for 20-25 minutes
  5. Serve with your favourite yoghurt and enjoy!
