Buttery jam-filled sandwich biscuits are what dreams are made of. The almond flour in the dough gives these cookies just the right amount of nuttiness. Their fun little windows showcase its delicious filling and just tempt you to dig right in! 

Fill these with your favourite jam (or even Nutella or Caramel) and play around with the shape of your cookie cutters to make fun alternatives throughout the year. These cookies are perfect for Christmas, valentines day or any day of the year. 

What are Linzer Cookies?

These typical Austrian cookies are a form of shortbread cookies filled with preserves. They are named after the city Linz in Austria and are traditionally served during Christmas. 🎄

What do I fill Linzer Cookies with?

There are 1001 ways to fill your Linzer cookies. Traditionally they are filled with preserves and flavourings can vary. But here are some of my top recommendations:

  • Strawberry jam
  • Raspberry jam
  • Lemon curd
  • Dulche de Leche
  • Nutella
  • Chocolate ganache

Baking time and oven temperature

Baking time and oven temperature may vary depending on your used oven.  All oven temperatures in my recipes are based on a conventional oven. If you bake with a fan-assisted oven, turn down the temperature slightly as these ovens tend to become hotter than a conventional oven at that temperature setting. Ovens have the tendency to deviate from the temperature you set the oven to. I would highly recommend using an oven thermometer to ensure the inside of your oven is at the right temperature. My oven for example only goes up to 160C even though I turn it up to 230C 

An oven that is too hot may result in an overbaked or burnt bake, an oven that is too cold may result in underbaked and soggy bakes. Having the thermometer will not only help in getting the right temperature but also helps in determining the right baking time. 

Other factors that may affect baking time

The size of your baking dish may also highly affect your baking time. A wider pan means that the batter spreads out more, resulting in it baking faster than in a smaller pan where the batter is thicker in height. 

Remember that cookies continue to cook once they’re out of the oven, so they are very easy to overbake. Take them out as soon as the edges start to brown, they’ll continue cooking and will be perfect once cooled down. 

How do I keep my Linzer cookies from going soggy?

If you want the biscuits to stay crispy, store the baked cookies separately and only assemble them right before serving. The moisture from the jam will automatically soften the cookies when stored. 

How do I store Linzer Cookies?

Store your cookies in an airtight container in the refrigerator for up to a week. Refer to the above if you want them to stay crunchy.

Ingredients

  • 170gr unsalted butter *room temp
  • 100gr sugar
  • 1 large egg yolk
  • 1tsp vanilla extract
  • 160gr all-purpose flour
  • 70gr almond flour
  • Lemon zest
  • ¼tsp salt 
  • Jam of choice 
  • Icing sugar

Instructions

  1. Cream together the butter and sugar until pale and fluffy, about 2-3 minutes. Add the egg yolk and vanilla extract and mix until combined
  2. In a separate bowl, mix together the almond flour, all-purpose flour, salt & lemon zest
  3. Add the flour mixture to the butter mixture and mix until it forms a dough
  4. Divide the dough in half and shape each half into a disc. Wrap both discs in plastic and refrigerate for at least 2 hours or up to overnight. 
  5. On a floured surface, roll out 1 part of your dough till 2-3mm thick. Cut out your cookies (about 5-6cm in diameter) and lay them on a baking sheet lined with parchment paper. Pop these back in the fridge to firm up for at least 20 minutes
  6. Roll out your second piece of dough and repeat this process. With these cookies, use a second extra small cookie cutter to cut out a fun shape in the middle of your cookie. Let these cookies also firm up in the fridge for about 20 minutes
  7. Preheat your oven to 180c
  8. Bake your chilled cookies for 12-15 minutes or until the edges start to brown. Take out of the oven and leave to cool for 5 minutes. Then transfer them to a wire rack to cool completely. 
  9. Dust the cookies with the hole with icing sugar and spoon some jam in the centre of the flat cookies. Now place the icing sugar-dusted cookie on top of the jam cookie and sandwich them together
