Homemade Lemon Curd

This dreamy and creamy lemon curd will absolutely knock your socks off! It’s tangy, sweet and perfeclty creamy 🍋 Store bought lemon curd has nothing compared to this banger!

What is lemon curd?

Lemon curd is a tart & tangy topping or spread with just the right amount of sweetness. You can kind of think of it as a lemon version of a fruit jam, yet it is typically made from citrus fruits. Lemon lovers, this is for you!

What can I use lemon curd for?

You can top almost ANYTHING with lemon curd and it’ll taste good. Think Yoghurt, Croissants, Cookies, Lemon meringue cookies, Scones, Macarons, Eton mess, Pancakes, Cakes or just straight out of the jar, no judgement here ;). 

Why does my curd have a metallic taste?

Carefully choose the pan you want to make your curd in. A metallic sauce pan can give off it’s taste, which leaves behind this metallic aftertaste. Unfortunately, lemon curd is very sensitive in picking up flavours. So make sure you use a non-metallic sauce pan if available. 

Other tips for making the best creamy lemon curd

  • Use room temperature ingredients - This will help the whole mixture to emulsify more easily and will reduce the risk of your mixture splitting
  • Infuse your sugar with lemon zest - Rubbing together the zest & sugar will enhance the overall lemon flavour + less waste!
  • Sieve your lemon curd - This will help to take out the fine bits of lemon zest and any eggy parts that might have formed for a super smooth lemon curd
  • Blend your butter into the lemon curd - This is KEY for making your curd creamy. The same reaction as when you make homemade mayonaise happens, where the fat from the butter emulsifies with the eggs and creates an incredibly creamy mix
  • Cook your curd low and slow - Don’t rush this part as that’ll most likely curdle your eggs. We don’t want scrambled eggs
  • Vanilla - Trust me! Adding vanilla paste or a vanilla bean makes all the difference in flavour and gives it a slight floral essence

Ingredients

  • 200gr lemon juice
  • 140gr sugar
  • 5 egg yolks
  • 1tbsp cornstarch
  • 100gr butter
  • Zest of 4 lemons
  • 1tsp vanilla paste or 1 vanilla bean

Instructions

  1. Add the zest of your lemons into your sugar and rub it between your fingers. The lemon will release its oils and flavour into the sugar and give it an extra lemony kick
  2. Add all the ingredients except the butter to a medium saucepan and whisk until it is all combined
  3. Pop the pan over medium-low heat and bring it to a gentle boil while constantly stirring. Make sure you keep stirring so the eggs don’t curdle
  4. Once the mixture has come to a boil, increase the heat slightly and keep stirring until the curd has thickened enough to coat the back of a spoon without dripping off
  5. Strain the hot mixture through a sieve
  6. Add your butter and place a stick blender on top, now blend the butter into the hot lemon curd. The fat of the butter will emulsify with the eggs and the whole mixture will turn into a creamy version of your favourite lemon curd
  7. Set aside to cool completely and serve on yoghurt, scones, cookies or use it as a cake filling
